Composition of Olean

Olestra is a specific type of sucrose polyester blend made from fat, with the properties of the fat, but contributes zero fat, zero calories, zero trans fat and zero cholesterol to foods. Olean is made starting from soybean or cottonseed oil. It is put together in a special way, creating an oil that looks, cooks and tastes like ordinary fat, but isn't broken down by the body. As a result, Olean adds no fat or calories to foods. Olean maintains the properties of normal fat flavor, texture, mouthfeel and thermal stability.

The olestra molecule is much larger than the regular fat molecule. The special properties of the olestra molecule make it impossible for the body to digest, allowing it to add the great taste of full fat without the fat and calories associated with normal fat.
